  • 1 kg Italian sausage (mild to hot, as per preference)

  • 1 medium-sized onion, chopped

  • 4 to 5 cloves of garlic, finely chopped

  • 960 ml low sodium beef broth

  • 2 to 3 tomatoes, processed into sauce

  • 4 to 6 tomatoes, finely chopped

  • 1 tsp black pepper

  • 2 tbsp Italian seasoning

  • 2 bay leaves

  • Lasagna noodles (adjust quantity as desired)

  • 1 cup shredded mozzarella

  • 3 to 4 cups ricotta cheese or cottage cheese

  • 1 cup grated Parmesan

Instructions

  • Firstly, take a large pot and place it over medium heat. Add 1 kg Italian sausage, cooking until golden brown for about 9 to 11 minutes. Break the sausage as it cooks to ensure even browning. If there is excess grease, spoon it out.
  • Add the chopped onion to the pot and sauté until translucent or get golden brown. Add the 3-4 finely chopped garlic and sauté for an additional 3 to 4 minutes or until a nice aroma is noticeable.
  • Now, add 960 ml beef broth to the pot, followed by 2 to 3 tomatoes’ worth of sauce and the finely chopped tomatoes. Add 1 tsp black pepper, 1 tbsp Italian seasoning, and 2 bay leaves. Stir well and let it simmer on low heat for 10 to 15 minutes, ensuring to stir without stopping to prevent sticking at the bottom.
