Tips

  • When tempering with mustard seeds, cumin seeds, and asafoetida, make sure the oil is sufficiently hot. The seeds should sizzle in the hot oil, releasing their flavors. This enhances the overall aroma and taste of the green chickpeas curry or hare chane ki sabji or hara choliya sabji or hara chana masala.
  • To achieve a perfect texture, ensure that the vegetables, especially the potatoes and green chickpeas, are uniformly cut. This ensures even cooking, and the vegetables will absorb the flavors of the spices more effectively. Additionally, adjust the water quantity to achieve the desired thickness of the gravy.
